Q: what do I do with all my tomatoes?

A: enjoy them!!

and you could also make this.

tomato bread salad with olives, and mint

2 medium tomatoes, cored and cut into wedges.I like to cut the wedges in half .

1 hoagie roll, or 2 kaiser rolls, 2 bulkies,or a small baguette, cut into 1 inch chunks

1/3 Cup pitted Kalamata olives, halved

 

3 TBS( 45 ml) fresh lemon juice

2 TBS( 30 ml) olive oil

2TBS thinly sliced fresh mint leaves

in a bowl combine all ingredients, Season with salt and pepper, toss to combine.

let stand for at least 5 minutes( which will be very hard to do) or up to 30 minutes

before serving. Serves 4 takes 10 minutes to make.
