Delicious soup today - Cold Borscht

Saturday August 2nd, 2008 at 02:51PM

Cold borscht - I love this soup, especially on days as hot as today.

You can read a general receipe in Wikipedia but everyone in Poland makes his/her own variety. Buttered potatoes as an add-on is essential.

I prefer it warm with a sprinkle of lemon zest.

We have only warm soups so the only one (I think) for a scorching summer season is just delicious.

Very right, any special addition to the soup to make it different?

Kpjaspro replies:
No, not really - just black pepper and usual herbs.

The soup is quite easy to prepare but just perfect. It's only a pity that is rather a seasonal soup - later beetroot leaves are really hard to find.

I enjoy chlodnik (spelling???) on hot or even on cold days.

Good to hear. I'm surprised because I thought chłodnik was virtually unknown outside the Eastern Europe.

In my family serving chłodnik is confined to hot summer days. Maybe it's time to change that.
